Zucchini Skillet

Ok, ok, I promise, this is the last zucchini recipe for a while. I just have so much of it, we eat it for dinner almost every night and when I am not eating it, I am cooking it or baking it into recipes I can freeze for later. It is wonderful that we have barely had to buy food this summer since we bought a cow this spring and I planted the garden, but soon I will have to change the blog name to The Crazy Zucchini Lady. This one is so simple and so easy. I have been searching for a good ground beef/zucchini recipe because its something that we ALWAYS have on hand in the summer. Up until now they had all been a flop, either requiring too many ingredients or not tasting very good. This one was a winner!!

Here is where I got the original recipe. I did follow it pretty exactly because it is so damn easy. Seriously. It’s awesome…

Ingredients:

  • Zucchini
  • ground beef
  • salsa
  • cumin
  • garlic
  • onion

Recipe:

Brown the ground beef with the onions and garlic. Add salsa and cumin, cover and simmer for 5-10 minutes. Add the zucchini chunks. Cover and simmer for another 10 minutes. Don’t let the zucchini get too soft.

The only addition I made, obviously, was cheese. I served it on a bed of brown rice and topped it with shredded cheddar cheese. It was amazing. Wonderful Husband ate two platefuls. Little Darling and I ate it for lunch the next day, and WH wiped out the rest of the leftovers that evening as a late night snack. This is definitely a keeper, it is so good!!

I purposely didn’t put any amounts with the recipe because this is seriously so versatile you can personalize it to how you like. We had less beef and more zucchini, with just enough salsa to make it saucy but it could easily be soupy with salsa with a ton of ground beef, like a chili almost. Mix it up, make it your own, enjoy it!
